Ingredients

2 tins of mackerel in oil, drained

60g cream cheese, softened

1 tablespoon crème fraîche or sour cream

Juice of 1/2 a lemon

1 teaspoon Dijon mustard

1 tablespoon chopped fresh dill

Salt and freshly ground black pepper, to taste

1 spring onion, finely sliced for garnish

Driver’s Bread and Butter Pickles, for serving

Prepare the Mackerel: In a medium mixing bowl, flake the drained mackerel with a fork, making sure to break up any large pieces.

Mix the Ingredients: Add the cream cheese, crème fraîche (or sour cream), lemon juice, and Dijon mustard to the bowl. Mix well until the pâté is smooth and creamy. Stir in the chopped dill, and season with salt and pepper according to your taste.

Chill: Cover the bowl with cling film and place in the fridge for at least one hour to allow the flavors to blend and the pâté to set slightly.
